But more than just being a diet fad, going gluten free is a must for millions of people with Celiacdisease, and for those who have a sensitivity to wheat and gluten products.

Many doctors are recommending a gluten free diet to reduce inflammation and improve gastrointestinal health. And some proponents even claim it can help reduce or eliminate that spare tire you’ve been carrying around. But eating gluten free foods doesn’t have to be a tasteless or complicated affair.

Udi’s Gluten Free Super Bowl Party Snacks

Gluten Free Smoked BBQ Chicken Pizza


Gluten Free Smoked BBQ Chicken Pizza

Serves 5 (Makes 2 Pizzas)

Ingredients:

·  2 tablespoons extra virgin olive oil

·  3 chicken breasts, cut into strips

·  1 cup of your favorite BBQ sauce

·  2 – 8” UDI’s Gluten Free Pizza Crust

·  1 cup smoked Gouda, shredded

·  1 cup Mozzarella, shredded

·  1 cup parmesan cheese, shredded

·  1 red onion, sliced thinly

·  4 tablespoons cilantro, finely chopped

1.      Preheat oven to 400°F.

2.      Heat oil in a skillet and sauté chicken strips until browned, about 8-10 minutes. Set aside and let cool.

3.      In a bowl take 2 tablespoons of BBQ sauce and toss with chicken. Set aside.

4.      Place pizza crust on a non-stick sheet pan, spread with BBQ sauce to cover crust leaving a ½ inch from the edge without sauce.

5.      Sprinkle 3 cheeses on top evenly, top with onion and the chicken.

6.      Bake in the oven for 10-15 minutes or until cheese begins to bubble.

Sun Dried Tomato and Garlic Hummus with Gluten Free Toasted Triangles


Sun Dried Tomato and Garlic Hummus with Gluten Free Toasted Triangles

Serves 10-15

Ingredients:

Triangles

1 2-pack UDI’ s Gluten free pizza crusts

2 tablespoons extra virgin olive oil

salt and pepper

Hummus

½ cup water

4 tablespoons sun dried tomatoes, packed in oil

2 -15 ounce cans chickpeas, drained

4 garlic cloves

½ teaspoon chili flakes

½ teaspoon sea salt

1.      Preheat oven to 400°F.

2.      Cut Brush pizza crusts with extra virgin olive oil, sprinkle with salt and pepper. Cut into triangles and place on a non-stick baking sheet.

3.      Bake for 20-15 minutes or until golden. Set aside and let cool.

4.      Place hummus ingredients in a food processor, pulse at first and then blend for 10 – 15 seconds to mix ingredients until hummus resembles a paste like texture.

5.      Serve in a bowl surrounded by the Gluten free toasted triangles.

Serves 4

Ingredients:

·  2 cups heavy whipping cream

·  2 tablespoons powdered sugar

·  1-tablespoon pure vanilla extract

·  8 UDI’s Gluten Free Dark Chocolate Brownie Bites

1.      Whisk cream, sugar and vanilla until stiff peaks form.

2.      Break up the UDI’s Gluten Free Dark Chocolate Brownie Bites into small pieces.

3.      Spoon whipped cream into glasses, top with brownie pieces and repeat using 2 brownie bites per serving. Chill in the fridge until ready to serve.
